It is hot, but not as hot as other parts of Thailand. Sounds like a good itenerary to me, and July is ideal for what you want to do. If you are a photographer of any sort- you will be really happy taking photos at the temples. As far as the hilltruibes go- those are human petting zoos. The warmest part of the year will have passed but the yearly rainy season will have begun. It's about the lowest part of the year for tourists. November through February is the more popular time of year for visiting. But... there will still be some good days and there is always plenty of things do.
